Cranberry Brie Swirl Rolls

No bells or whistles today! I’m just a woman who likes cranberries and brie so I put it into a swirled roll! Enjoy!


Cranberry Brie Swirl Rolls

Makes: 6


Ingredients:

For dough:

- 1/ 4 cup sugar (50g)

- 1/ 2 cup milk (120mL)

- 1 packet of yeast (7g)

- 2 eggs + 1 egg yolk

- 1/ 2 cup unsalted butter, softened (110g)

- 1 1/ 2 tsp vanilla

- 2 cups + 3 tbsp flour

- 1/ 2 tsp cinnamon

- pinch salt


For filling:

- 1/ 2 – 1 1/ 2 cup cranberry sauce*

-7 oz Brie with rind cut off

1. In the bowl of a stand mixer combine sugar mixture, milk and yeast using a spatula. Let sit about five minutes.

2. Add all remaining dough ingredients (excluding one whole egg) to your bowl. Using a dough hook, knead on medium low until smooth, 5-10 minutes. Scrape down the sides of your bowl with the spatula as needed.

3. Remove dough from your bowl and grease the inside of the same, or a new, bowl and insert the dough.

4. Cover and let rise for one hour. After the initial rise, chill in the refrigerator overnight, or at least four hours.

5. After the dough has chilled sufficiently roll out on a lightly floured surface until about 12x14 inches in size. Spread cranberry sauce onto the rolled-out dough, leaving a one-inch margin around the edges. (Use enough sauce to make a single layer on the dough. This cranberry sauce is chunky with whole cranberries in it, don’t make the layer be more than one cranberry thick. Does that make sense??? If not please let me know haha!!)

6. Slice the brie and place on cranberry sauce as evenly as possible. This isn’t an exact science, so don’t worry! Each swirl should have brie in it so you’re fine!

7. Roll dough as you would cinnamon roll dough and slice into about six or seven two-inch rolls.

8. Place on a greased baking pan and using a pastry brush, brush your remaining egg evenly over the dough.

9. Bake rolls at 350 degrees Fahrenheit for about 35 minutes.

10. Let cool in pan and enjoy!
